Bratwurst Casserole

2 lbs. bulk bratwurst
1 large onion, chopped
12 oz. sauerkraut
8 oz. cooked egg noodles
1/2 teaspoon pepper
1 tablespoon sugar

In skillet, brown bratwurst then add onion and saute. In bowl, mix remaining ingredients with the bratwurst and onion. Place into greased casserole dish or pan and bake at 325 degrees for 1/2 hour.

Bratwurst Minestrone

1 lb mild bulk bratwurst
4 cups beef broth
1/2 cup elbow macaroni
5, 14-1/2 oz cans seasoned diced tomatoes
1 cup chopped onion
1-1/2 tsp Italian seasoning
1 tablespoon olive oil
1 cup diced zucchine
20 baby carrots, sliced
14-1/2 oz can Italian green beans
2 teaspoons bottled minced garlic
16 oz can kidney beans
16 oz can chickpeas or white beans
2.25 oz can black olives (optional)

Boil macaroni. Cook bratwurst in skillet, add olive oil, chopped onion, baby carrots and garlic. Cook until carrots & onion are tender. Then add beef broth, tomatoes, Italian seasoning and zucchine, cooking for five minutes. Lastly add the remaining ingredients (drained of juices) and the cooked macaroni.

Bratwurst Pancakes

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
2 cups sour milk
2 tablespoons vegetable oil
1 pound bulk bratwurst, cooked and drained
Pancake syrup
In mixing bowl, combine the flour, baking powder, salt and baking soda. Set aside. In another bowl, beat the eggs, milk and oil. Stir into the dry ingredients, just until moistened.

Jalapeno Pepper Bratwurst Chili

30.5 oz can chili mix
15.5 oz can hot beans
Two 14.5 oz cans diced tomatoes
1/2 cup diced onions
1/2 lb grilled jalapeno bratwurst (2 links diced)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon chili powder
Pinch of cayenne pepper (optional)
Saute onions, add remaining ingredients and simmer 15 to 20 minutes. Top with shredded cheese, diced onion & jalapeno peppers if desired.
